CAPE GIRARDEAU, MO (KFVS) - Southeast Missouri State University's dining service, Chartwells, is welcoming Keith Yonker as executive chef.
Yonker will be directly responsible for developing new menus and managing food production for dining and catering services offered at the university.
According to the university, Yonker brings impressive credentials to the Chartwells team. He is an American Culinary Federation certified Executive Chef classically trained in traditional Italian cuisine, and his experience has provided him a varied skill set in preparing French, Asian and Mediterranean dishes as well as traditional American cooking. He graduated from Webber International University in Babson, Fla., and also completed a culinary apprenticeship from the Walt Disney Corporation. Yonker worked as a regional chef for Morton?s Restaurant Group and also served as Executive Chef for a family-owned Italian Restaurant chain in Northeastern Indiana. He was most recently Proprietor and Executive Chef of Keith?s Landeck Tavern and Catering in Southern Ohio.
Originally from the Southside of Chicago, Ill., Yonker grew up in an Italian-American household, gaining an appreciation for Italian cuisine watching his father and grandfather prepare traditional Italian style meals. His appreciation of Italian foods led him to serve as a two-year member of the US pizza team. Competing in the heart of Tuscany, his team placed as high as 8th?in the world.
?I have worked as a Chef all over the country and I enjoy cooking in the Midwest the most?, Yonker said. ?In the Midwest, there is a high appreciation of comfort foods and particularly Italian foods. These are foods I grew up with. These are the foods that got me interested in becoming a chef. These are the foods that are still appreciated. I am excited to be able to offer my favorites, while at the same time introducing my take on the trendier dishes we are seeing on the culinary stage.?
Along with providing all meals on the campus of Southeast Missouri State, Chartwells is a full service catering provider serving residents and business in Southeast Missouri.
